INDIA is working on a broad strategy to develop its spices industry to improve its sales to both the local and foreign market, Jairam Ramesh, the country's minister of commerce, said in his address to open the 9th World Spice Congress in Goa, India. Mr Ramesh first reminded delegates that the mainstay of the Indian spice industry is the local markets. Aside from pepper where just over half of production is exported, exports are typically just a small proportion of output, ranging from a maximum of 16% for chillies to 1% for ginger and coriander.
